A.M - Opening Manager Checklis 

  • Unlock front door
  • Check for notes and/or voicemail.  Check with Bookkeeper
  • Check the reservation book
  • Do walkthrough
  • Turn on temperature control (heat or air conditioning) throughout
  • Inspect cleaning job, if necessary instruct porter what to clean or take notes for busboys
  • Situate for the morning on couches (res book, phone, coffee…).  Manager is responsible to answer phones till 9pm or whenever hostess arrives
  • Check host draw and cabinet to ensure it is organized
  • Write up sign in sheet; adjust staffing as necessary (assign stations)
  • Check plants (inside and out)
    • Water green plants on Mondays
    • Top off water level for potted branches M, W & F
    • Order new branches when necessary
  • Check linen to ensure enough
  • Check with day Chef
  • Check lights
    • Of the four presets in the 1st floor Kitchen – day setting is the top button
    • The entire scheme is as follows:   
      • Day
      • Night (somewhat dark)
      • Night (darkest)
      • Early night
  • Receive deliveries for front of house
  • Be aware of waiters arrival; ensure all have arrived in a timely manner
  • Check order sheet and do whatever the day of the week responsibility is.  If applicable, check inventory and place orders
  • Supervise the putting away of liquor, the setting up of the restaurant by the busboys, waiters and runners.  Be aware of who is late
  • After Bookkeeper leaves, go to office to enter Sea Crest bill and do whatever paperwork must be done. 
    • Once a month, update the phone list on the computer.
    • Mondays: Restart Squirrel and make FOH copies
      • Check amount of paperwork copies:
      • Shift sheet CC and cash breakdown
      • Waiter cash out
      • End of the shift sheet for tips and points
      • Lunch menu
      • Dinner menu
      • Brunch menu
      • PIV slips
      • Lunch roster
    • Wednesdays: Do Host schedule
    • Check for parties (lunch and dinner) in party folder
  • Go to bank if necessary
  • Change music to lunch selection and turn on by 11:45
  • Make sure front area is organized and clean.  Ensure fruit on all platters is fresh
